Our Chicharrnes are also commonly called cortezas de cerdo in Spain and are a lighter, deeply savoury and super crispy version of the traditional Black County pork scratching loved in the UK. They are enjoyed across Spain as a traditional aperitivo or tapas and made by rendering the fat from the pork skin, drying out the remaining cooked
